Cream of Broccoli soup | ||||||||||||||||||||||||||
add 2 Tbsp of butter, finely dice 1 small onion |
Sautee Onions, add 2 bay leafs 1 tsp basil, 1/2 tsp black pepper |
2Tbsp Corn starch, mixed with cold liquid or use 4 Tbsp flour |
2 tetra packs of broth |
6 cups diced broccoli, Great use of stalks |
Simmer for 1 hour |
Enjoy as a chunky soup OR |
If your family is picky like mine, mix it in the blender |
Cream of Broccoli Soup
2tbsp butter or EVOO
1 Medium Onion
1 clove garlic
2 bay leaves
1 tsp Basil
1/2 tsp pepper
2 tetra packs of your favourite broth
6 cups broccoli
2 tsp cornstarch OR 4 tsp flour
Dice Onions and press or mash garlic, sautee with butter or oil, basil, (I used dried, the rule that I go by is if it's dry add it first, if it's fresh add it last) pepper, and bay leaves. I mixed the cornstarch with some of the broth. you have to mix cornstarch with cold or it will clump up, if you're using flour add it to the butter/ onion mixture and cook for a few minutes to remove the gluteny taste. Add Broth, and broccoli. Simmer for as little or as long as you'd like. I usually make mine an hour before dinner time. Enjoy as is, or whir in the blender for a smooth creamy broccoli soup. We like to sprinkle cheese on top of ours. It's delicious!!! Enjoy.
